Wired has a short article on this new software for Macs (and PCs) called iStopMotion from Boinx software that is apparently the easiest to use time lapse software available (at least according to them). The basic version is only $40, although there are more expensive professional versions available. There was some coverage at a tech show in London (BETT). The Wired article has some examples, but there are others on YouTube like this one of some fighting figurines or another one done with clay.
